jalapeno poppers

another treat from my cousin ali, this appetizer is simple, easy, and quite a hit with the crowd.  enjoy!

ingredients

8 ounces cream cheese

3/4 cup shredded parmesan cheese

3/4 cup shredded cheddar cheese

1/2 Tablespoon diced scallions

10 jalapenos (to make 20 poppers)

eggs

2 cups cornflakes cereal

directions

mix cream cheese, parmesan cheese, cheddar cheese, and scallions.

cut peppers in half long-ways and gut.

fill peppers with cheese mix.

crack a few eggs in a bowl and scramble.

crush cornflakes.

coat filled peppers in egg wash and then roll in cornflakes.

place on foil-lined cookie sheet and bake for 15 minutes at 350 degrees fahrenheit.
