the wedding chronicles | decision #9

THE CAKE

in addition to being very dedicated to picking out a great photographer, phillip was also very excited about working together to pick out the perfect cakes for our big day.  now, you might be curious when i say “cakes,” as in multiple cakes and not just one, and you are reading correctly.  not at all modern-day weddings but at many it is a popular trend to have the standard wedding cake and now also a groom’s cake.  a groom’s cake, what is that?  well, it’s exactly what it sounds like it is:  a cake the groom gets to pick and decorate all to his liking.  now, this isn’t to be said that a bride and groom are incapable these days of picking a single cake together (which phillip and i definitely were able to do), but it’s just another fun thing (essentially another cost, if we’re being very honest) that helps to represent the coming together of two individuals into a single marriage.  and, if you’re like phillip and me and planning on only having one wedding day, then why not!  the more cakes the merrier.  🙂

although several bakers were recommended by the wedding coordinator, we decided first to try out a local baker near and dear to the davis family.  sister’s sweet creations has been baking cakes for years in peachtree city, and of all those bakes they have baked, several include countless cakes enjoyed at davis family birthday parties, events, and occasions of all sorts.  and so since cathy (the lead baker at sister’s sweet creations) already had a special place in phillip’s heart, we figured we’d start with her and go from there.  so, phillip, his mother michele, and i met up on a beautiful thursday afternoon to press our luck at sister’s sweet creations.

the bakery has a tiny storefront, but right in the middle they’d put together a couple of tables with a generous spread of freshly baked cupcakes, cookies, and all sorts of frostings.  i think i could get used to this kind of service!

cathy first asked for all the “vitals” – the wedding date, location, number of guests, so on and so forth.  we were in luck that our wedding date was available and, better yet, that she and her crew only commit to one wedding per day.  i definitely liked that answer, knowing that our cakes will be her primary focus.  so far so good, and we hadn’t even taken a taste!

we then also started talking design.  for the wedding cake, we hadn’t yet pinned down a particular style or color or theme, but the good news is that sister’s sweet creations has a lot of experience with many different techniques.  we together scrolled through their gallery online as cathy pointed out different trends and ideas, and even though we didn’t finalize anything for the wedding cake, i do think we got a better of what will work for us and our venue.

now as for the groom’s cake, phillip had a very specific vision in mind.  i don’t want to spoil the surprise, so all i’ll say is this:  phillip’s cake definitely represents who he is and the things he loves.  i highly recommend you check out his cake (and the wedding cake, too) before dinner is done at the reception.  we think you’ll love them both!

at this point you’re likely thinking to yourself, “kelsey, it’s great that you’re going with a local baker and we can’t wait to see these stunning cake designs, but what about the flavors?  what do we have to look forward to in five months?”  well, i’ll start by saying that all the cakes and frostings and buttercreams we tasted at sister’s sweet creations were delicious.  but, of course, having all of them in one cake or even two might be a little much.  so, if you insist on knowing, we were able to narrow down the delicious flavors as follows.  first, the groom’s cake will be a combination of chocolate cake and peanut butter frosting (we highly recommend getting a slice of this one when you’re there).  and as for the wedding cake, it will be three tiers, one with the bakery’s signature flavor called “strawberry champagne,” one with a classic and delicious white almond, and a third with dangerously sweet white chocolate raspberry.  i expect it will be grand and rich and the perfect treat to satisfy your sweet teeth.  we of course hope you love them as much as we do, but if not, then more cake for us!  🙂

rumor has it

that chipotle now has queso.  actually, it’s not really a rumor.  they’ve been promoting it for about a month now on tv and here in atlanta they’ve even put up big ‘ole billboard advertisements.

earlier this week i’d so conveniently forgotten my packed lunch at home in the refrigerator, so i ended up needing to go out for a bite to eat.  i wanted something quick and satisfying and figured chipotle would be a solid choice, especially since it’s very close to our office.  i ordered my chicken bowl like always and then decided i’d take a chance and try a cup of the queso with some chips.  i hadn’t heard the best reviews about it on social media but we all know how social media can be, so i thought i’d go out on a limb and find out for myself.

i ripped into the chips, opened the queso, took a dip, and had my first bite.  first things first, the spices they used in the queso were actually very tasty.  it was flavorful and had the slightest kick, probably due to the chipotle chili and jalapeno.  i took a couple more tastes and thought, “well, this isn’t as bad as people were making it sound.”

but then as i made my way to the bottom of the queso cup, a funny taste started to linger in my mouth.  something tasted off about the cheese and then the texture started to bother me as well.  the queso was very, very thick and actually not very smooth at all.  i guess “gloopy” would be a good word to use to describe it.  as for the cheese, i realized the issue after looking at the ingredient listing online:  they use cheddar cheese – ick!  now, don’t get me wrong, i love cheddar cheese, i love all cheese!  i haven’t yet met a cheese i don’t drool over, but cheddar cheese seems like the completely wrong choice for a queso.  maybe that’s because here in the south we’re used to a nice mild, white, smooth cheese in our queso or maybe it’s just because cheddar cheese really isn’t a good idea at all.  regardless, after finishing the queso (because i hate to waste) i swiftly scarfed down my chicken bowl to get the bad tastes out of my mouth.

now, with all this being said, i advise you try chipotle’s queso at your own risk.  and, if you do insist on giving it a taste, i will say this:  try just a cup of the stuff.  i truly don’t think it’d be wise to drizzle this stuff all over your tacos or burrito or bowl and ruin your entire meal.  you have been warned!

The Adventures of Kiwi Kyle | Part 3

One of if not the most important activities I plan for when traveling is eating!  What is <insert name of destination> best known for?  Where do the locals go?  Most of the time you can find those places via a quick online search, but sometimes you find them just by looking around and keeping your eyes open.  I’ve found a couple places like that in Christchurch, so here are my recommendations for future travelers!

First things first, breakfast, the most important meal of the day.  Unfortunately it’s not a meal I usually have while traveling for work because I’m so focused on getting to the client site.  A quick run to the local ‘bucks is usually all I have time for.  However, since this trip has me staying over weekends, I have ample opportunity to enjoy breakfast, and I found a good spot to do so at Tap N Grind.  While busy, it didn’t have the hustle and bustle, get-out-of-my-way-I-just-want-my-coffee feel to it.  Much more relaxed and casual.  My desire for my Waffle House Peachtree Road Race waffle must have been sending me subliminal messages, as I spotted the waffle and bacon and decided that was the dish for me.  As you can see, it looked awesome and it also tasted awesome.  The waffle was crispy on the outside and fluffy on the inside.  The citrus mascarpone acted like butter to make the waffle soft but not soggy.  The caramelized banana gave it that little something extra and the variety of nuts a little crunch.  It was so good that I made a point to tell the waitress, who sheepishly said, “We just assume everything in America is better than what we have here.”  I told her she was dead wrong on this; it was hands down the best waffle I have ever had, and even in the top three as far as breakfast dishes go!  When I went back the next week, I had the same waitress and she smiled and asked if I would be having the waffle again, which, of course, I did!

For dinner, I recommend you check out O.G.B. (aka Old Government Building), as it hosted various government departments from 1913 to the 1980s.  After being vacant for some time, the building was threatened to be demolished but eventually made it to a real estate developer.  Today, the bar and Heritage Hotel call this place home.  They have a traditional restaurant space with the bar being in a separate area.  Eating in the bar is the way to go with a speakeasy feel consisting of a wood bar, dark colored walls, and the staff being dressed in 1920s and 1930s attire.  I had the beef rib burger, but just to be clear, we would call this a sandwich in the States.  In New Zealand they call a burger anything where protein (beef, lamb, chicken, etc…) is served between two pieces of bread.  The protein doesn’t even necessarily have to be formed into the traditional patty shape.  To flip it the other way, what we call a pulled pork sandwich, a Kiwi would call a pork burger.  Enough on semantics and onto the food!

The “burger” was cooked very well and had this molasses-like sauce that put it over the top.  It was paired with potato wedges and a house-made ketchup that tasted much more tomato based than American ketchup and, to be honest, tasted better than American ketchup.  The final reason you should go to O.G.B.?  Well, any place that uses a sousaphone as part of its decor is well worth the trip!

june’s ohio adventure

for those of you who know me well, you’re probably wondering to yourself, “who is this june?  is she a long-lost high school friend?  is she a college acquaintance she’s reconnected with nowadays?  is she a new coworker she’s kindly befriend?”  well, i hate that this isn’t more exciting, but june is what i named my lovely rental car for the week!  ladies and gentlemen, i introduce to you june, the 2016 grey chrysler pacifica!  isn’t she a beaut?!

the name hit me like a ton of bricks as i was weaving around winding suburb roads and channeling my inner mom, specifically my inner barbara billingsley.  i mean, it really is quite empowering, navigating this sturdy, speedy, and functional vehicle around town.  i felt like i could rule the world!  anyway, june and i became besties last week in ohio while i was up there for work and some personal traveling.  and, in an effort to spice things up on my solo trip, i decided to blog about all our adventures.  our first stop?  dayton.

when in philly…

do as the philadelphians do and eat a cheesesteak!  this past week i spent a couple days up in the city of brotherly love for work and decided to, of course, make the most of it.  although the weather wasn’t too welcoming upon my arrival, thankfully the friendly faces at geno’s steaks were.  i’d been to the rival pat’s several years ago and decided it’d only be fair to give the competition a try as well.  plus, a friend of a friend had recommended it, so i was happy to oblige.

i hopped out of the uber and tried not to look too much like a tourist.  well, that approach didn’t work really at all in my favor because there aren’t any instructions anywhere on where to order or how.  i didn’t want to rustle the feathers of any locals by taking an absurd amount of time, so i fessed up and told the employee i was from out-of-town.  he smiled when i shared the news and was happy to make a recommendation that would be sure to please.  he even gave me a pen as a souvenir!  awww.

i plopped myself down at a nearby table and, upon unrolling the sandwich, realized i may have made a mistake by ordering the sandwich and cheese fries.  that cheesesteak was huge and probably enough on its own!  i would never myself eat a sandwich that big with that much filling, much less with a heap of cheese-smothered french fries, but i was sitting right next to the order counter and felt the employees’ eyes peering through the glass, eager to know if i liked their famous sandwich.

i could do nothing else but roll up my sleeves, grab a mountain of napkins, and get to work.  the first thought i had as a bit into the cheesesteak was that the bread was insanely fresh; that i could not deny.  i also couldn’t deny that the rib-eye was sliced perfectly thin.  however, i have to confess that among the fresh bread, savory steak, onions, and cheese, i wasn’t getting the flavor punch i had hoped i would get.  perhaps instead of the grilled onions i should have gone for fresh onions, if that is even an option?  i don’t know, but i eventually powered through messy bites of cheesesteak and slathered french fries to the near end as best i could.

as i finally admitted defeat with a hunk of bread and a few fries remaining, i relaxed a moment to take in the atmosphere of this well-loved (and long-loved) philly establishment.  it’s clear that locals and non-locals alike have a special place in their hearts for the beloved cheesesteak.  open 24 hours a day, geno’s has earned its place as a traditional icon of the city, satisfying hungry wayfarers’ tastebuds no matter the time of day.

the humble beet

folks, this post is dedicated to the humble, the delicious, the underrated and widely unknown beet.  i’m not sure i could pinpoint in time for you when and where my beet obsession began, but it feels like such a natural pairing to me and it’s almost as if i can never get enough!  i think if you were to ask my friends about my love for beets, they’d probably say the same thing.  i mean, it’s so known among my personal circle that whenever beets are on the menu at a restaurant, everyone immediately hollers, “kelsey!  there’s beets on the menu!  are you going to get them?”  and, i always and happily reply, “of course!”

i love my beets cold, cooked, or now, as i recently discovered, in cracker form!  that’s right, it’s the cracker i’ve been waiting for my entire life.  i was just doing my weekly shopping at the local disco kroger when i moseyed into the cracker aisle, trying to make a snack selection.  i could always go with the traditional cheez-its or ritz crackers but then a beacon of light shone directly in the right spot and called me to the good thins beet crackers.

i squeaked in excitement, left my buggie in the middle of the aisle, and rushed over to the shelf.  i could hardly believe what my eyes were seeing!  i immediately threw them into the cart and rushed home so that i could give them a taste.  now, as a beet-lover, i had high expectations for these crackers.  as i began to munch away, i was waiting for the classic beet flavor to hit me like a ton of bricks but it didn’t quite happen.  it really is more of a hint of beet after you take a few bites and, if you didn’t know they were beet crackers, you probably wouldn’t be able to identify them as such.  however, i am still ecstatic that the cracker industry is trying to raise awareness about this incredible root vegetable that really has so many health benefits and is quite versatile in the kitchen.  from gold beets to red beets, just cook ’em up, pour on some balsamic vinaigrette and sprinkle on some goat cheese and you’re good to go!  #beetsforlife!

hattie b’s hot chicken – birmingham, al

this past weekend, phillip and i made a swift drive west to visit my parents in birmingham for a couple of days.  it was a belated birthday celebration for my father as well as an early valentine’s day gathering for all four of us.

my mom was occupied at the school for a show choir event all day saturday, so phillip and i helped my dad run errands around town and then take kramer for a lovely afternoon walk over at heardmont park.  this place brings back countless memories of my brothers during the baseball days, and my father and i reminisced as we strolled from field to field.

the day crept into the evening, and i’d say all four of us had worked up quite an appetite for dinner.  so, we all hopped in phillip’s mazda and my dad navigated us to downtown birmingham where we joined the crowd in line at hattie b’s for some hot chicken.

we waited in line for about ten minutes, but it wasn’t so bad since that gave us time to look over the menu.  now, mom and dad have been here before, and both testified that the medium sauce made their heads sweat.  per their recommendation, i then knew that the mild would be the way to go.  in addition to choosing your heat level, you also have several chicken choices.  from breasts to wings to tenders, surely there’s something on this menu that can satisfy.

at seven o’clock on a saturday night, you can probably imagine how busy this place already was.  so, when a table opened up, i sprinted to claim it for us.  as i settled in and took a look around, it was clear by the simple atmosphere and the line out the door that tasty eating was awaiting us.

mom, dad, and phillip arrived with our number and our drinks and we chatted as we waited on our food.  i’m going to guess that they try to make everything fresh to order, because we had plenty of time to discuss wedding plans.  oh, did i mention phillip and i are engaged?  well, if you didn’t know before, you’re in the know now!  🙂  more on all that fun to come later.

in the end, the food was certainly worth the wait.  between the sides and the chicken, there was hardly anything left on our plates!  the pimento cheese mac’n’cheese was creamy with a little kick, the collard greens were well-cooked (and i’d recommend throwing some hot sauce on them to spice things up), and i heard the potato salad, fries, and coleslaw were also delicious.

my mild tenders were, first of all, humongous.  i actually needed help finishing them!  although delicious when dipped in either the honey mustard or bleu cheese, a bite on its own was quite flavorful.  i’m glad i went with the mild because although the heat may not be in-your-face at first, you definitely start feeling it after two or three tenders.  phillip also had the mild tenders and didn’t leave a single bite uneaten.  mom said her southern chicken tenders were wonderful and dad could not get enough of the mild wings he ordered.

i’d say if i find myself back at hattie b’s (which i’m sure i will) i think i’ll go for the wings.  the tenders are awesome if that’s what you’re in the mood for, but the wings really looked like they might be this restaurant’s specialty.  i also don’t doubt i’d try the potato salad (it looked awesome on my mom’s plate) and i would certainly get an order of the banana pudding.  my mom says it is heavenly, and i don’t think i’ll forgive myself if i forget to get it next time.

that blue apron thing

after much advertisement dodging and internal reflecting, i decided to take the plunge, jump on the bandwagon, and try out blue apron.  for those of you who do not know, blue apron is a meal-delivery service.  now, when i say “meal” i mean that they mail you all the ingredients and instructions for a few meals that you then get to cook in the comfort of your own home.  now, there are all sorts of companies like blue apron, but considering they were offering three meals for only $20 in your first week, it sounded like a deal too good to pass up.

when you sign up for blue apron, you do get to decide what day of the week your box arrives.  i figured tuesday was as good a day as any, so a few days ago our first box was waiting at the back door for me to scoop up and bring inside.

in addition to designating your delivery day, you get to provide some meal preferences.  for example, if you’re vegetarian or only eat seafood, you can indicate just that in your profile.  a handy feature, especially for someone who might be on a more restricted diet.

the box that arrived was quite compact, at least in my opinion, and i got as excited as a child on Christmas morning when i grabbed the scissors and cut that box open.

before i proceed much further, it is clear that blue apron definitely has some thinkers working for them.  the way they package the ingredients and recipes along with the charming notes and witty branding really does the job it should:  it gets you excited to cook!

one of the delightful things about blue apron is that each refrigerated item is individually packed, “pantry” produce is loose in the box (which is fine because less packaging means less waste), and you get these awesomely large freezer packs that you can re-use or, if you desire, you can have blue apron recycle for you – nifty!  however, maybe above all else, the best part is that everything comes in the cutest little bags and cutest little containers with the cutest little labels!  again, their marketing dollars hard at work.

our box had three meals that have two servings each.  of the options in front of us, phillip and i decided to make the burgers and slaw because we were hungry.  as such, we wasted no time at all grabbing the recipe (complete with instructions, pictures, and recommended wine pairings) and getting to work.

now, the estimated completion time for this particular recipe was 25-35 minutes.  my friend judson who had done a similar meal-delivery service said that it always takes him longer than what the recipe says.  well, challenge accepted!  i kept our trusty chef timer around at all times to see if we could beat the clock.

the recipe’s step-by-step instructions were perfectly clear.  i chopped away and mixed up the slaw while phillip was on burger duty.  phillip enjoys being in the kitchen and was especially entertained as he marked off each completed step with a little check on the recipe.  #adorable

just as phillip was flipping the burgers to finish them off, our chef timer rang out loudly, sounding the buzzer for the suggested 35 minutes to cook the entire meal.  well, it turns out we needed about 10 minutes more.  but still, a home-cooked meal in under an hour isn’t something to be too upset about, right?  sure!

with the oven off and the stovetop cooling down, phillip and i plated our first blue apron meal, poured a couple glasses of delicious red wine, and dug in.  first things first, yes, this meal was as delicious as it looks.  the slaw was a great crunchy texture to have with the tender beef patty and schmear of sriracha mayo.  and, as you can see, there was plenty of slaw that we really even had it as a second side next to the sweet potato wedges.  those wedges were cooked through just right and were so easy to make!

now, i know what your next thought is.  “that looks like a pretty big plate of food.”  well, it certainly was.  in fact, the portion size for this meal was so large that i almost couldn’t finish!  i let phillip polish off the last few sweet potato fries and then i think we were both stuffed.

besides the end result of a delicious and different dinner on an otherwise normal tuesday night, what is our review of blue apron?

  • are you happy you tried it?  yes, especially with the first week at only $20!
  • did the box provide everything you needed to make the meal?  almost.  blue apron assumes you have things like extra virgin olive oil and salt and pepper on-hand.
  • was the food you got a good value for what you paid?  again, for the first week, yes!  it’s hard to go out to restaurants and spend only $20 on six humongous meals.
  • what are you liking most so far?  i think the convenience factor is the ultimate perk of something like blue apron.  i didn’t have to stop at the store on the way home from work, which saved me time and got us cooking earlier in the evening.  i also very much like the variety of recipes.  for example, this week’s recipes were the burgers and slaw, creamy shrimp spaghetti (which we made last night and also was quite tasty), and then chicken enchiladas.
  • will you do blue apron again?  well, considering i forgot to cancel next week’s “order,” yes!  at least for one more week.  do know, though, that the regular price for three meals with two servings each (so six meals total) bumps up to $60 per week.  however, if you don’t like eating monstrous dinners, you could likely split these two servings per meal into four, so then you’re getting twelve total meals for $60 rather than just six.  so, in the end, still a pretty good price.
  • anything else we should know?  well, yes!  apparently i have three free meals i can give to my friends, so if you’re interested, let me know and i’ll hook you up!  also, for those of you who want more per meal or have more than just a pair like phillip and me, they do have family-size options you can order.  and (i promise this is the last thing) you can also skip weeks without any penalty at all.  just make sure you do so a week before your next delivery date.

equal parts cream cheese & bagel

for those of you who maybe don’t know me well, i have a confession to share:  i love bagels and i love cream cheese and i love them even more when they’re together.  i don’t know when my obsession really started, but it’s been around for ages.  i remember even back in college when i’d have breakfast with kari and brett on tuesday and thursday mornings before class.  we’d meet up at snelling hall on uga’s campus for a quick bite to eat.  i would get a couple of scrambled eggs, some fruit, and then half a bagel.  now, like many restaurant establishments, snelling provided the little philadelphia cream cheese single-serve tubs for use.  most normal human beings might use the logic that “since i have half a bagel, i only need half the tub of cream cheese.”  well, no such logic exists in my world.  i shamelessly smothered that half bagel with ALL the cream cheese for the tub and enjoyed every single bite.  the 1:1 ratio of bagel to cream cheese was the best part of my morning.

well, i’m happy to report i have yet to outgrow this appetite obsession.  ask anyone around me and they’ll tell you the same.  these days, though, without a dining hall to satisfy my bagel-cream cheese cravings, i stop about once a week at goldberg’s.  it just happens to be on the right side of the road on my drive into work; it’s a miracle i don’t stop in there more, actually.

anyway, i typically order an egg bagel toasted with plain cream cheese.  this might not sound so exciting, but trust me when i say that EGG BAGELS ARE EVERYTHING.  anyway, a couple weeks ago i made my regular stop, ordered my regular order, but was slightly disappointed when i got to the office and opened the bag.  there was a measly spread of cream cheese between the two slices of bagel, and it nearly ruined my morning.  okay, that is an exaggeration; i still enjoyed the bagel, but it was obvious with each bite that there should have been more cream cheese.

so, this past friday i stopped in as i usually do and when they took my order, i said, “now, last time i ordered the cream cheese was a bit skimpy.  this time can you be sure there’s a generous amount on there?”  after asking i held my breath, slightly terrified the employee was going to judge me and then proceed to talk about me to everyone the moment i left the restaurant.  however, a smile grew on her face and she said, “i’ll be sure to take care of you.”

i thanked her, waited at the check-out line, and paid.  once the bagel was ready, she reached over the counter to hand it to me and i was instantly satisfied.  wait, how could i know, without opening the bag, that she had done me right?  i’ll tell you how.  the bag felt heavy.  oh yes, i knew she had heard a sister’s cry for cream cheese and delivered!

see?  look at that cream cheese to bagel ratio.  nearly equal, as it should be.

then, then!  the real test was passed.  you always know you have the right amount of cream cheese on a bagel when you can see your teeth marks in the cream cheese after taking a bite.  i was in heaven!

do i really think i’ll ever outgrow my cream cheese-bagel obsession?  likely not.  in fact, i hope i pass it down to my children!  if you’ve got any good bagel suggestions that would rock my world, i would love to hear them.  this request especially goes to my friend jamie who is on a one-man mission to try new bagels and cream cheeses in his town of new york city.  you go, boy!

In the highly unlikely chance you happen to go to Lake Arrowhead, in the mountains outside of Los Angeles, I have the perfect place for you to go for breakfast or lunch, Belgian Waffle Works.  Note, from your friendly friends down here in the south, THIS IS NOT SIMILAR TO THE WAFFLE HOUSE THAT WE HAVE COME TO KNOW AND LOVE.  Nevertheless, this place is terrific and well worth the visit.

For those of you wondering, “What’s the occasion for why you were in Lake Arrowhead?”  Well, we were all there for my niece Alison who was getting married.  More on that to come later.

Now, back to the restaurant.  First, arrive early.  Second, the menu is huge.  Probably too many choices, actually.  In addition to breakfast items they have a large lunch section of sandwiches, etc…We had a group of six:  Phillip, Clark, Kyle, Kari, my cousin Linda, and me.

The food is fantastic.  We all had different waffle selections.  In addition, Phillip ordered a biscuit with sausage gravy.  Even though we were in the mountains outside of Los Angeles, this gravy was very, very good.  The gravy might have come from a can, might have come from a box.  Who knows.  All I know is that Phillip, Kyle, and I shared it and we all loved it.

Probably the best part of Belgian Waffle Works was the staff.  All of them were witty, charming, and had terrific “patter.”  As all of my children will tell you, I’m big on the “patter” and these people had it.  I would hire all of them in a minute, their “patter” was that good.

Terrific food, terrific staff.  If you happen to be in Lake Arrowhead, CA, go to Belgian Waffle Works!  And, even though this time I didn’t get to go to In-N-Out, Belgian Waffle Works made up for it.
