lemon lime pound cake

doesn’t that just sound delicious?  i’d been snooping around on ree drummond’s web site in search of a perfect spring treat to make.  thankfully this recipe for lemon lime pound cake was front and center in the desserts section, and with such a beautiful finish, there was no question i’d be making it in the near future.

although i didn’t have a fancy pan like ree, i used my standard bundt pan, and the cake was still incredibly delicious.  the pound cake is dense and moist and perfectly complemented by the zesty and sweet glaze.  this cake was well-received at my office, so i highly recommend you get that grater and mixer out and get to work!

summertime in march

last night i was looking around for an easy dinner recipe, something that required limited pots, pans, and clean-up.  as i was poking around on ree drummond’s site, i came upon her version of pasta salad.  it was a wonderful choice on a cool march evening!  i paired it with oven-baked italian sausage and had the nicest meal while watching the women of the bachelor tear apart sweet juan pablo.  “it’s okay!”

all the snow and ice down here in atlanta has kept me cooped up in my condo.  thank goodness i made a trip to kroger beforehand!  the last three days i’ve been by myself since our office has been closed.  i’ve been able to accomplish quite a bit for work and for the house, but there’s only so much one person can do.  so!  i decided i needed to do something fun and bake a cake.  this sour cream streusel cake is a recipe from my aunt cindy out in los angeles.  enjoy!

almost risotto

tonight i was jonesing for something delicious and hearty, something healthy for me, too.  i came upon this recipe, a risotto remake, through active.com, since i sometimes like to call myself a runner.  the dish was flavorful and, as i mentioned, quite hearty.  it makes a very large potful, so you will have plenty for your family or enough for leftovers all week long.  i served mine with pork tenderloin, a great pairing to round out this meal.  enjoy!

like most of america, i spent last sunday afternoon cleaning house and preparing appetizers for my friends.  it was super bowl sunday!  what better excuse to get together, eat unhealthily, and drink?  i hosted a quaint party of ten at my condo and served up some pretty killer food.  the menu included buffalo chicken dip, spinach and artichoke dip, pimento cheese, chicken wings, and jalapeno poppers.  all homemade.  that’s right.  i slaved away in my little kitchen for three straight hours to get these prepped, mixed, and plated.  i truly do like to think of myself as the hostess with the mostess.

red velvet cupcakes

today is my co-worker ohhee’s last day with the company.  she is moving on to a new and exciting beginning with her fiancé sam in los angeles, california.  she is certainly going to be missed, so in bittersweet honor of her departure today, i specially made her requested red velvet cupcakes with cream cheese frosting.

the cake batter is delicious, as is the frosting.  the recipe yields 30 cupcakes, so i might recommend doubling the frosting so that they can be generously topped.  enjoy!
