all the snow and ice down here in atlanta has kept me cooped up in my condo. thank goodness i made a trip to kroger beforehand! the last three days i’ve been by myself since our office has been closed. i’ve been able to accomplish quite a bit for work and for the house, but there’s only so much one person can do. so! i decided i needed to do something fun and bake a cake. this sour cream streusel cake is a recipe from my aunt cindy out in los angeles. enjoy!
cake ingredients
1 package yellow cake mix
8 ounces sour cream
1 small box vanilla pudding
1/2 cup oil
4 eggs
streusel ingredients
2 Tablespoons cocoa
1/4 cup white sugar
1/2 cup chopped pecans
directions
blend together the cake ingredients and beat 2 minutes with electric mixer. batter will be thick.
mix together the streusel ingredients.
pour 1/3 of the cake batter into a well-greased and floured bundt pan.
sprinkle 2/3 of the streusel mix over the batter.
pour remaining cake batter on top.
top with remaining streusel mixture.
bake 50-60 minutes at 350 degrees fahrenheit.
this cake is light and fluffy and just sweet enough. i probably could have eaten half the cake myself, but thank goodness i have the smallest amount of self-control. i just hope i can take it to the office, because if it stays here in the house with me, it won’t last long.
