a thanksgiving to remember

as i sit here, all done for at least today’s work day, i find myself thinking, “man, i wish we could rewind to a week ago.”  that’s right, i’m already sadly missing the thanksgiving holiday celebrated last week, and even though Christmas is on the horizon, i’m sure i’m not the only one feeling this way.

to keep this post from feeling too “down,” i want to share with you, my kind readers, all the fun we had last week up in the great smoky mountains.  it was my first major holiday away from my family (all grown up!), and although i dearly missed mom, dad, kyle, clark, and kari, i felt quite welcomed by phillip and his family on this special occasion.

it started last wednesday morning when mr. davis, mrs. davis, and emily came to pick up phillip and me bright and early for the drive up to gatlinburg.  we were packed in snug as bugs as we trekked up through north georgia in the great smoky mountains.  as you may know, there have been treacherous wildfires in that part of the state, and although they didn’t bother our trip up there too much, please keep in your thoughts the folks of tennesse and georgia around those parts, especially those right in and near gatlinburg for the fires they are suffering through right now.  this town is certainly more than a tourist attraction, and we all hope they can recover in no time.

our first destination was the cabin that cousin tony found and booked for our group.  with ten of us total, a large space was certainly necessary.  well, this three-story cabin (complete with hot tub and bunk beds) was just the ticket for our stay.  after quickly exploring, we kids unloaded the car of the luggage, treats, and drinks (can’t forget the wine!).

phillip and i were a bit famished afterwards, so we took the car into town for a bite to eat.  we parked in a deck towards the north end of downtown and moseyed along the sidewalks, taking in our first sights and sounds of this charming town.  as we walked, it was clear that we weren’t the only ones in gatlinburg for the weekend; the shops and attractions were already bustling with plenty of other visitors.  before we went too far, we spotted the pancake pantry and knew that’s where we’d be eating lunch.  this cozy restaurant is a welcoming combination of cracker barrel and the original pancake house (only helpful if you’ve ever been to either).  the service was amiable and the food was tasty.  phillip’s buckwheat pancakes were irresistible, and my buttermilk pancakes and sausage were hitting the spot also.

after paying we strolled around a little bit more before heading back to the cabin to greet the rest of the family.  once all there, it was mr. davis, mrs. davis, grandma lorraine, uncle steve, aunt pam, cousin tony and his girlfriend priscila, phillip, emily, and myself.  talk about a good group!  we spent the rest of wednesday night and all day thursday eating (constantly), playing card games (how about that euchre!), drinking (of course), and relaxing.  the weather was quite agreeable, especially thanksgiving day, and i couldn’t have asked for a more pleasant setting than the lush colors of the changing trees that surrounded us.  can’t you just picture it!

friday morning arrived and i think it’s safe to say there was a mild case of cabin fever going around.  see what i did there!  but really, we all needed to get out and stretch our legs, so we caravanned into town for some good old fashioned tourism.  while some folks went for breakfast, others of us were immediately interested in checking out the local ole smoky moonshine distillery.  that’s right, not even eleven a.m. and we were throwing back shots!  our friendly bartender briana was patient as we tasted and rated each of the thirteen moonshines they had available.  with no food in our stomachs just yet, you can imagine the hootin’ and hollerin’ time we were kicking up in there!

ze best chili ever

yesterday at work we had the annual chili cookoff at the office.  like a good sport, i offered to bring some in.  however, i don’t really have a go-to-chili recipe on hand.  lucky me, my family out in california is all about a good chili competition, so i went to the experts for a little help.

my cousin ali was quick to supply a recipe that put her in first place at a local competition in southern los angeles.  well, if it’s good enough for them, it’s good enough for me!  i pulled up the recipe and was slightly intimidated by the required prep work and number of ingredients, but i figured if i was going to make some chili i may as well go all out for it.

to make things easy on myself, i chopped all the vegetables earlier in the week so that the actual cooking would be a quick process.  now, after having made the chili and also eaten more bowls than i care to admit, i think it goes a long way if you chop the vegetables up as tiny as you can.  i mean, i’m not sure a big ‘ole hunk of green pepper is really what you want, but if that’s how you like your chili, go for it!

also, whatever you do, do not leave out the italian sausage.  in my opinion, the sausage is what makes the chili, so please, please, make sure you have it in there.

finally, i think i could have used a bit more heat.  now, the recipe calls for four tablespoons of chili powder which, honestly, terrified me.  as such (and not wanting the chili to be inedible because it was too spicy), i used only a single tablespoon of chili powder.  however, this recipe makes so much that i think i easily could have done at least two if not three, and i am a spice wimp.

so!  the chili cooked overnight as i dreamed happy dreams, and when i awoke in the morning, my nose was warmly greeted with the delectable scent of a cozy, home-cooked meal in the crockpot.  after freshening up, i loaded up the car and headed to the office, where i counted down the minutes until noon so that i could eat.  it’s hard to not be hungry when there are crockpots full of chili in the office!

once the hour was upon us, our moderators meghan and greg explained that we could try all three and then vote for our favorite chili, for the most unique chili, and then for the hottest chili.  the votes would be cast and collected and then the winners would be decided.

my coworkers and i gabbed and relaxed between bites of chili and cheese and bread, but i was secretly (and anxiously) awaiting the results of the competition.  now, i wouldn’t say i am much of  a competitor, but i wanted to make ali proud!

so, after all bowls were emptied and the tally sheets were in, the results were……that i won the most unique chili!  people liked the seasonings and sausage (duh!) and thought the flavor profile was unexpected (in a good way).  greg won the award for the hottest chili and then our other coworker tabri won the award for the favorite chili.  i think the potatoes in tabri’s chili is what won over everyone, even i admit it!

it was such a pleasure to become part of this company tradition, and even though the chili was a bit of work, i’d say it was worth every minute spent.  this chili is hearty without being heavy and is so delicious that i had a hard time putting my spoon down.  if you’re looking for a warm meal as the winter weather sweeps in, give this recipe a try.  i bet it’d be a hard thing to be disappointed with it.

the final word!

ladies and gentlemen, i am reporting to you live as the final presidential debate takes place between mr. donald trump and mrs. hillary clinton.  i have once again found myself out of town for this entertaining and informative viewing, this time coming to you direct from west palm beach!  i will admit that splitting my attention between blogging and listening is a bit of a task, but i will do my best.

in response to my previous post about the second presidential debate, my lovely friend courtney replied that i should enjoy the final presidential debate by enjoying chips and guacamole while listening to some billy joel.  well, ask and you shall receive!  as things at my client site wound down, i asked them for a good mexican restaurant recommendation nearby.  after a little mumbling and collaborating, torero’s authentic mexican cuisine was suggested.  only about ten minutes from the office, it was rightly a no-brainer for me.  with google map’s turn-by-turn directions in the background, i let billy joel serenade me along the way.  give me more of that “uptown girl”, i beg you!

anyway!  the breezy atlantic winds were blowing strongly this evening, so i requested a seat outside on the patio.  although the food was delicious (and i’ll get to all of it shortly), the service left much to be desired.  after seating me at my table, i wasn’t waited on for about 15 minutes.  eh, not the best way to start the dinner.  however, i caught up on all my social media feeds and e-mail inboxes so i wasn’t too ruffled about the delay.

it had been quite a day at the office, and with two more days on-site, i knew it was going to be a busy end of the week.  chips, salsa, and the large house margarita sounded like a bet i couldn’t lose, so that’s just what i started out with for my meal.

i took my time sipping on my beverage and snacking on some chips and eventually ordered, per courtney’s request, some guacamole.  i’ll be honest, the guacamole was less impressive than the salsa.  it’s not that it was bad; i ate the entire plate.  however, it wasn’t anything particularly special.  now, i don’t like to discriminate when it comes to guacamole because, let’s all be real, there’s not much better than avocados really any day of the week so i ate my dip contently.

as i finished up my appetizers, i asked for an order of the fish tacos because, you know, i was in florida and fish tacos sounded like a good idea.  unfortunately, after taking my order the waitress returned to tell me, much to my dismay, that they did not have fish that night.  well, alrighty then…since i was still in the mood for tacos, i ordered a chorizo taco and, per the waitress’ recommendation, a steak taco.  well, i’ll say that these tacos were the highlight of the meal.  the chorizo wasn’t too spicy but was quite flavorful and the steak taco wasn’t overly filling.  i’d absolutely order these two tacos again, but with so much else on the menu, i’m sure i’d try something else if i were to return here to dine.

m&m cookies!

i found myself in a baking mood late last night.  the result?  m&m cookies!  this recipe has been in my recipe book for ages, and whenever i flip past it i always wonder how i obtained it.  there’s no author, no web url, nothing.  just ingredients and instructions written on a piece of college-lined notebook paper.

regardless of how and when i got it, i decided they would make the perfect labor day weekend treat.  rather simple, this recipe makes a bucketful of cookies that would be great for a crowd, the office, or even a college football tailgate (go dawgs!).

ingredients

1 cup shortening (like crisco shortening, not oil or butter)

1 cup brown sugar

1/2 cup white sugar

2 eggs

2 teaspoons vanilla extract

1 teaspoon salt

1 teaspoon baking soda

2 1/4 cups plain flour

1 bag of m&ms (12 ounces, anymore and you’ll have more candies than batter!)

instructions

cream together the shortening and sugars using an electric blender.

add the vanilla and the eggs and beat until mixed.

in a separate bowl, mix the salt, baking soda, and flour.  then, slowly incorporate into egg mixture with blender.

using a spoon (not the mixer!) fold in the m&ms and stand back at take a look at what a beautiful thing you’ve made.

dollop the cookie batter on a parchment paper-lined cookie sheet and bake for 10 minutes at 375 degrees fahrenheit.  let cool before storing.

then!  because you have extra batter and what to be a little cray on a friday night, make one giant cookie the size of your face!  🙂

coconut curry shrimp

earlier this week i was looking for an easy weeknight recipe that would satisfy and also provide tasty leftovers for lunch the next day.  well, phillip and i struck gold with a coconut curry shrimp recipe that had been hiding in my recipe book.  to no surprise, it actually originated from fellow food blogger ree drummond, and the unarguable fact that this recipe is delicious should also not be a surprise.

i got done prepping all the ingredients when phillip walked in the door just in time for cooking and assembling.  our walk the moon album was spinning on the record player while he prepared the shrimp and sauce and i finished up the rice and got the table set.

we sat down and dug in, remembering exactly how good this meal is.  phillip was almost speechless between bites!  this recipe is quick, delicious, and filling.  it doesn’t take many scoops of rice and shrimp and sauce to satisfy your taste buds and your hungry stomach.  as usual, i pretty much doubled up on the garlic and the curry because who doesn’t like a little punch at the end of each bite.  also, don’t be afraid to go a bit spicier since the coconut milk will definitely sweeten the dish considerably.  enjoy!

o-h-i-o, ohio!

this past thursday morning i boarded an md-88 with several coworkers to fly to columbus, ohio for our annual company meeting.  between team gatherings, putt-putt golf, and drinks at brazenhead, the event was quite the success in melding many offices together as a united front for the successful business years ahead for which we are striving.  go team!

most folks flew back to atlanta friday night, but i had the wonderful pleasure of staying the whole weekend.  as it would be, phillip has family only minutes from our dublin location – such a small world!  so, it was a no-brainer for phillip to take some time off work and join me.

once work things wrapped up friday afternoon, phillip picked me up and we checked into the local embassy suites.  we rested our feet for a little bit and then were in the car again.  where to?  well, seeing as how our stomachs were grumbling, it was a good thing we were headed to dinner with grandma lorraine and cousin tony at the local favorite the rusty bucket.  they were seated at a booth just inside the restaurant awaiting our arrival.  both greeted me warmly as we scooched into our seats and got to know one another.  conversation came easy among the group among local brews and delicious food.  i highly recommend the wedge salad to start and then the buffalo chicken sandwich – it was massive!  the chicken parmesan that grandma lorraine had was a generous serving also.  tony’s quesadilla and phillip’s philly cheesesteak didn’t disappoint either.  so much else on the menu looked so appealing that i guess we’ll just have to visit again!

after paying the checks, grandma lorraine called it a night.  tony, phillip, and i, though, were in the mood for another drink, so tony led us to a local bar called the dub pub.  most certainly a favorite dive bar of those who live nearby, we grabbed a high-top and continued visiting while enjoying some whiskey-gingers and a few ipa’s from the columbus brewing company (referred to by ohioans simply as “cbc”).  soon tony’s friend sean joined us, and i think eventually we blended in with the regulars as we chatted, cheered on team usa during the olympics, and took in some preseason nfl games.

as our glasses emptied and the early evening grew into the later night, phillip and i were about ready to call it a day.  we bid tony and sean farewell and hopped in the rental.  as we cruised along to the hotel, phillip pointed out the grater’s right nearby and the convenient fact that they were open until eleven p.m.  it was only 10:30 at that point.  phillip swung the camry into the parking lot and we helped ourselves to the counter.

now, any of you who know phillip know that he has quite the sweet tooth.  i used to “blame” his mother because she is an ice cream lover, but now i know it is grandma lorraine who started it all.  she revealed that each night she either has an ice cream or a cookie with some milk before going to bed.  old habits die hard, i suppose!  😀

with many more choices at the store as opposed to just the grocery aisle, i did a bowl of strawberry cheesecake and mocha chocolate chip.  whoa, that stuff was unbelievably good.  the strawberry cheesecake was undoubtedly my favorite, and it was lucky i even got to try it since it is a limited summer flavor!  phillip considered his options for a while and then settled (to no one’s surprise) on a scoop of the buckeye and a scoop of the peanut butter chocolate chip.  i am telling you, this boy could eat only reese cups for the rest of his life and be satisfied.  i suppose it’s hard to deny a man his ice cream when it makes him this happy.

it was finally after over-eating on quite possibly the best ice cream ever created on this beautiful earth that we hit the hay.  with two more days to go in ohio, we needed our beauty rest!

the easiest dip ever

this past weekend phillip and i spent some time in dadeville, alabama visiting my childhood friend adam at his parents’ lakehouse.  at lake martin we lounged in the water drinking beers, took the jet ski for a whirl, ventured to chimney rock, and enjoyed the company of friends both old and new.  after this long day of relaxation and fun, we arrived back at the house hungry and lazy.  well, the dip that adam’s mom tina whipped up was the perfect appetizer for a bunch of hungry and lazy twentysomethings.  this recipe is so easy and so delicious that i insist you go out to the store, acquire all of the ingredients, and make it right now!

so, how easy is it?  let me tell you.

step one:  grab an 8-ounce block of cream cheese out of the fridge (no need to let it soften).

step two:  moosh that cream cheese evenly across the bottom of some kind of microwave-safe dish (i think a square or circle casserole dish would do nicely).

step three:  grab a can of your favorite chili.  with beans, sans beans, beef, turkey, whatever your taste buds desire.

step four:  evenly spread the chili on top of the cream cheese.

step five:  suffocate the chili layer with shredded cheese of your choice.  i prefer to put so much on that you can’t see the chili through the cheese.  true confessions:  i love cheese.

step six:  microwave your masterful creation for about 3-5 minutes, depending on how powerful your microwave is and depending on how melty you want the cheese.  we nuked ours long enough so that the cheese kind of bubbled around the edges.  mm.

step seven:  devour the entire dish without any regrets because you’re at the lake and it’s the weekend and that’s acceptable.

vegan week day 5

okay, everyone, i know you all are just on the edge of your seats, waiting to hear how #veganweek wrapped up for phillip and me.  well, to quote barry manilow (and honor his beagle named bagel), i’ll just say that “it looks like we made it.”  somehow, some way, we made it through #veganweek.

did i like all the food we ate during #veganweek?  yes, and most of it i would absolutely make it again.  the hard part about it all is that i know how delicious some of my favorite foods are, and all week i was denying myself those tasty pleasures.  i wouldn’t say those cravings were overwhelming, but it became a mental game at some point.  just one more day, one more hour, one more moment!  that’s truly what it came down to.

so, friday night arrived and we met up with a bunch of friends at a local tavern called hobnob for dinner.  i’d already taken a look at the menu before we showed up, so i knew there would be a few options.  i started off with the allagash white beer and phillip treated himself to terrapin brewery’s peach brew of the summer season, which was appropriately sweet and refreshing for the hot night outside.

as we gabbed and caught up with one another, it was quite a test of will whether or not i would cave in or push through one more meal for #veganweek.  i tried not to let my eyes wander to the other tables that had steaming plates full of what looked like delectable pub food piled high.  by some miracle i stuck to my commitment and ordered the veggie burger while phillip tried the piedmont burger.  now, these burgers looked delicious as the wacky waitress placed them in front of us, but the taste was a different story entirely.  after taking just one bite of the falafel patty (which itself wasn’t too bad), every bite from there on out tasted like falafel.  seriously, it was like there was no distinction of flavor among the different ingredients.  i couldn’t even finish it, which i think says something about the dish but also about my waning excitement for #veganweek.  i wish i could say phillip’s experience was better, but unfortunately it was not.  as the first meal containing meat all week, it was very unsatisfying and underwhelming.  we both even had small stomach aches afterwards!  i guess i shouldn’t be too surprised, but it made it clear to me that this five-day challenge was plenty long.

after our disappointing dinner (everyone else very much liked what they had), we all headed back to kyle and kari’s apartment for a rooftop hangout.  they’re moving later this month to a house (ooh, how adult!), so we had to gather one last time at their place.  i mean, how are we not all going to miss this view?

we grabbed some benches around the fire pit, got that thing going, and busted out the s’mores supplies.  although it may have been ninety-something degrees out, the classic summer treat s’mores sounded like such a good idea.  and boy were they, especially as the #veganweek ending reward!

our final celebration for #veganweek came this morning when phillip and i had brunch at the original pancake house.  man, let me tell you, i ate half of the hash and pancake specialty in record time that i got done and didn’t even really remember eating it all!  the pancakes were so fluffy and buttery, and that corned beef hash was from heaven, i swear.  i took the last bite of over-easy egg with extra crispy bacon and said to phillip, “that was insanely good.”  it was the perfect end to an exciting and interesting week.

so, now that we made it through #vegan week, what are our final thoughts?  well, first off, the thing about eating vegan is that you really have to plan it all out.  you can’t just swing by your local mcdonald’s for a ten pack of nugs.  and you can’t just run into starbucks for your favorite latte or frappuccino.  i think that’s one of the hardest parts.  you also really have to be thoughtful about bringing food with you in case you end up in a hungry situation and won’t have quick access to something that fits your diet.

would i say i felt a physical difference?  probably not, in all honesty.  i still consumed a similar amount of food, it’s just that what i was eating was generally better for me than what i usually have.  phillip said he definitely felt more active and alert, which is something i suppose we all would like during our regular day-to-day.

i think more than anything #veganweek opened my eyes up personally to the fact that if i do want to snack between larger meals, i can do so in a healthy way.  for example, i can enjoy a ripe peach rather than a bag of chips (but don’t expect me to put down the spicy nacho doritos any time soon).

would i try #veganweek again?  probably not.  however, i do have a better understanding of that dietary lifestyle and everything that comes with it.  to those of you who have followed along all week, thank you for tuning in!  i hope our journey was entertaining and inspiring, in some way.  🙂

vegan week day 4 – here we find ourselves

folks, after munching down those kick-ass scones last night, i turned to phillip and confessed, “all i am craving right now is a chick-fil-a sandwich.”  he agreed, ” you’re telling me.  this vegan thing isn’t awful, but it is hard when i want a hot dog or some cheese.”  in all honesty, i think the initial excitement has begun to wear off, especially since the finish line is in sight.  my cravings surfaced even higher when i passed a chick-fil-a after going to the dentist this morning.  ah, but to have one bite of one chicken biscuit would be divine!

phillip did admit that he does feel more active and alert, which is how we all would like to feel in the middle of the day.  and i will say i do feel less guilty about what i’ve consumed, mainly because it hasn’t involved a family-sized box of cheez-its or some ice cream at the end of the day.  we’ve come this far, so one more day should be doable!  (any and all encouragement is welcome.  🙂 )

since chicken biscuits weren’t an option, phillip and i both had scones for breakfast.  and yes, they were just as delicious this morning as they were last night.  as for lunch, phillip enjoyed some lasting leftovers and i headed to panera bread for some black bean soup and greek salad.

now, our final meal to cook during vegan week (which created plenty for tomorrow, don’t you worry) was this asparagus risotto dish from the colorful writers at thug kitchen.  if you have a good sense of humor, please go read the entire recipe.  it is quite entertaining!  i will caution you, again, that they aren’t shy with their language.

anyway!  i’d rate this recipe on the “easy” level, and the tastes are subtle but quite flavorful.  well, i guess if you like asparagus!  the only problem i had is that i had the wrong rice-liquid ratio.  too much of one or not enough of the other, i’m unsure, but it was a little more broth-y in the end than it probably should been.  oh well!  i’m not going to let that keep me from scarfing down a bowl for dinner.  with a little more finesse on the next time around, i bet it’ll be just perfect.

vegan week day 3 – i dreamt about cheeseburgers

yes, cheeseburgers were dancing around in my dreams, bumping into me on the sidewalk, creeping over my dinner plate, brokenhearted that i’d abandoned them.  such a horror that i woke up drenched in a nervous sweat!  okay, that’s not entirely true.  i didn’t dream about cheeseburgers last night; i actually had visions of tofu slices!  okay, that’s a lie also.  i honestly don’t remember last night’s dreams.  all i remember is i slept very well and awoke refreshed and ready for the day.  perhaps that’s because i decided to forgo my typical 4:30 a.m. workout.  yes, that was definitely a good choice.

anyway!  day three came and went like any typical wednesday did.  i had some cherries for my morning snack and then craisins on a log in the early afternoon.  interesting how some of my vegan selections seem to remind me of my childhood…

for lunch i had reheated veggie taco bowl, and it definitely hit the spot.  also, i think i made all my coworkers jelly (that’s short for jealous, just fyi) because it smelled so good.

the danger struck, though, when my coworker andrew brought back a whole parcel of cookies for the office.  everyone was commenting, “mm, how tasty!”  “ah, these are great!”  i had to look away as everyone delicately unwrapped them and took delicious bite after delicious bite without me.  i wouldn’t say my will to resist was crumbling, but those treats definitely reminded me how much i am looking forward to saturday when i can indulge in all my favorite eats once again.

as for dinner this evening, we didn’t get too formal.  phillip had his company’s first kickball game of the summer (woohoo!) and i kind of lounged around watching law & order: svu once i got home.  after finally peeling myself off the sofa (i’d already seen that particular episode countless times), i got to baking.  i do enjoy cooking, but i’d say baking is much more of a passion for me.  another friendly recommendation, i whipped up a batch of vegan lemon poppy seed scones from the lovely i love vegan pair of brittany and william.  i’ve actually never made scones, so i wasn’t quite sure what to expect, but the recipe seemed straightforward and i was itching for something to satisfy my sweeter baked good tooth.

after letting the scones cool and generously drizzling them in glaze, i could hardly wait until phillip got home so we could try some.  don’t they look delectable?

well, if looks could kill, then how these scones tasted would send you to heaven and back.  i was incredibly happy with the biscuit-like texture, the light fluffiness, and the bright lemon flavor.  as phillip and i sat munching them at the dining room table, i couldn’t help but be impressed by myself (and the recipe).  i mean, these scones are slap-your-mama good.  they’re almost so good that i might eat a second scone right now and then another in the morning for breakfast.  no judging!  😉
