this week my co-workers are lucky enough to enjoy a southern classic, coca-cola cake. everything you need to make this decadent, sweet treat yourself is below. bon appetite!
cake ingredients
2 cups all purpose flour
2 cups granulated white sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups miniature marshmallows
1 cup (2 sticks) butter
1 cup coca-cola
1/4 cup unsweetened cocoa
1/2 cup buttermilk
2 large eggs, well-beaten
1 teaspoon vanilla extract
frosting ingredients
1/2 cup (1 stick) butter
1/3 cup coca-cola
1/4 cup unsweetened cocoa
1 teaspoon vanilla extract
16 ounces confectioner’s (powdered) sugar
cake directions
preheat the oven to 350 degrees fahrenheit.
grease a 13 x 9″ glass baking dish.
in a large bowl, stir together flour, sugar, baking soda, and salt.
in 2-quart saucepan, heat marshmallows, butter, cola, and cocoa over medium-high heat until bubbles from around the edge of the pan. remove from heat and continue stirring until marshmallows melt.
pour marshmallow mixture over flour mixture and stir until well combined with a wire whisk.
whisk in buttermilk, eggs, and vanilla until blended.
pour batter into prepared pan and bake 40 minutes. transfer to wire rack.
frosting directions
in 1-quart saucepan, heat butter, cola, and cocoa to boiling over medium-high heat and the remove from heat.
add vanilla and stir until butter melts.
place confectioner’s sugar in a medium bowl and pour hot butter mixture over sugar. with wire whisk, stir until well combined.
spread frosting over top of hot cake immediately after removing from oven. cool in pan on wire rack.
